Serves 4-6
This easy and delicious recipe comes from a Conservation Society cookbook from the early 80s.
Ingredients #
- 2 lbs green beans, trimmed and cooked crisp-tender
- 4 sliced bacon, chopped and cooked crisp, drippings reserved
- 1 medium onion, sliced thinly
- 3 tbsp. brown sugar
- 1/2 tsp. salt
- 1 tbsp. dijon mustard
- 1 tsp. yellow mustard seeds
- 2 1/2 tbsp. cider vinegar

Saute the onions in the reserved bacon drippings until soft and beginning to brown. Add the remaining ingredients and heat until syrupy. Pour over the beans, and fold in with the crispy bacon.
