This makes a very quick and elegant side-dish.

Ingredients #

  • 1/2 lb frozen baby artichokes or artichoke quarters, thawed
  • 1/4 cup olive oil
  • 1 tsp minced garlic
  • 1/4 tsp dried rosemary, crumbled
  • 1/4 tsp dried oregano, crumbled
  • 1/4 tsp dried basil, crumbled
  • 2 tsp fresh lemon juice, or to taste
  • 1/3 cup dry white wine or dry vermouth
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tbsp finely minced fresh parsley

Instructions #

In a skillet, heat the olive oil with the garlic over medium heat, and cook the garlic until softened but not browned. Add the artichokes and sautee them until they begin to get a just a bit of browning on some edges. Stir in the herbs and lemon juice, season with salt and black pepper to taste, and cook for a minute more. Add the wine and red pepper flakes and continue cooking until the wine is mostly cooked away. Stir in the parsley, remove from the heat and serve.
