Carrots and curry powder are an unexpectedly magical combination.

Ingredients #

  • 1 lb. carrots, washed, peeled and sliced thin on the diagonal
  • 2 tbsp. butter
  • 1 tsp. curry powder
  • Lemon juice to taste

Instructions #

In a large saucepan of salted boiling water, boil the carrots for 3 minutes or until they are crisp-tender. Drain them well.

In a heavy skillet melt the butter over medium heat, stir in the curry powder, and cook the mixture until it foams. Add the carrots and cook the mixture, stirring, until the carrots are tender. Season to taste with salt, pepper, and drops of lemon juice.
