This preparation couldn’t be more simple, but it perfectly highlights the goodness of carrots themselves. An easy side dish for almost anything.

Ingredients #

  • 5 or 6 cups sliced peeled carrots
  • 1 tbsp sugar
  • 1 1/2 cups water
  • 1 1/2 tbsp butter, plus 1 additional tbsp
  • 1/2 tsp salt
  • Pinch of pepper
  • 2 tbsp fresh minced parsley

Instructions #

Place the carrots in a heavy bottom 2-quart saucepan with the sugar, water, 1 1/2 tbsp butter, salt and pepper. Cover, bring to a boil, and reduce heat; simmer slowly for about 30 minutes, or until the carrots are tender and the liquid is mostly evaporated. Correct seasoning.

Just before serving, reheat quickly and toss with parsley and the additional butter.
