Makes about 1/2 cup
Perfect on a winter salad, with the mellow sweetness of sherry vinegar playing against the faint bitterness of walnuts.
Ingredients #
- 2 tbsp walnut pieces, toasted
- 1 1/2 tbsp Sherry vinegar
- 1 tbsp medium-dry Sherry
- 1 tbsp blue cheese
- 1/3 to 1/2 c salad oil
Instructions #
In a blender or food processor, blend the walnuts, vinegar, Sherry, blue cheese, and salt and pepper to taste, scraping down the sides with a spatula, until the mixture is smooth. With the motor running, add the oil in a thin stream and blend until the dressing is emulsified.
