Salad Dressing
Makes about 2 1/4 cups
This bold dressing from Restaurant Biga in San Antonio also makes a great marinade for fish or chicken that is to be grilled. Which is great, because it makes a *lot* for salad dressing.
Ingredients #
- 1/2 cup unseasoned rice vinegar
- 1/2 cup sugar
- 1/4 cup soy sauce
- 1 tbsp grated fresh ginger
- 1 tbsp finely chopped shallots
- 2 tbsp minced garlic
- 2 tbsp chopped scallions
- 1 tbsp toasted sesame seeds
- 1 tbsp Sambal Olek or similar hot chili sauce
- Juice of one lime
- 1/4 cup peanut oil
- 2 tbsp toasted sesame oil
- Salt and pepper to taste
Instructions #
Combine all ingredients except the oils, salt and pepper, and whisk to combine well. Slowly pour in the oils while continuing to whisk. Season with salt and pepper. Refrigerator for at least an hour to allow flavors to marry.
