Ravigote Sauce

Makes about 2/3 cup
This piquant cold sauce is delicious with London broil or skirt steak.
All of these can be shaped into a log and wrapped tightly in plastic wrap; this will provide neat round slices to place over grilled steaks or chops.
Ingredients #
- 1 tbsp Dijon mustard
- 2 tsp white wine vinegar
- 1/3 c olive oil
- 1/3 cup finely chopped onion, soaked in cold water for 3 minutes and drained
- 1 tbsp minced shallot
- 1 tbsp snipped chives or minced scallions
- 2 tbsp drained capers, chopped
- 2 tbsp minced fresh parsley
- 1/4 tsp dried tarragon, crumbled
Instructions #
In a small bowl whisk together the mustard and vinegar, and add the oil in a slow stream, whisking continuously until emulsified. Stir in the onions, shallots, chives, capers, parsley and tarragon. Season to taste with salt, cracked black pepper and drops of Tabasco sauce. Cover and chill. May be kept covered and chilled for 1 day.
