Serves 4

Quick and bright, the salad puts the peppery flavor of arugula front and center.

Ingredients #

  • 1 tsp Dijon mustard
  • 1 1/2 tbsp balsamic vinegar
  • Freshly ground black pepper to taste
  • 1/3 c Extra-Virgin olive oil
  • 2 bunches of arugula (stems discarded if using mature arugula), rinsed and dried

Instructions #

In a small bowl, whisk together the mustard, vinegar, pepper, and salt to taste. Add the oil in a slow stream, whisking continuously until the dressing is emulsified. In a bowl, toss the arugula with the dressing to coat, and divide between four salad plates.
