Apple, Celery Root & Fennel Salad with Hazelnuts

A truly interesting salad perfect for winter meals. It requires a few less-common ingredients that are worth getting to know.
Ingredients #
- 1 shallot, finely minced
- 1 1/2 tbsp cider or sherry vinegar
- 3 tbsp grated fresh horseradish
- 3 tbsp olive oil
- 1 tsp honey
- 1 granny smith apple, peeled, cored, sliced, and cut into matchsticks
- 1/2 small celery root (about 8oz), peeled, sliced, and cut into matchsticks
- 1 medium fennel bulb, trimmed and thinly sliced
- 1/2 cup chopped fresh parsley leaves
- 1/4 cup chopped fresh mint leaves
- 1/2 cup hazelnuts, toasted and roughly chopped
Instructions #
In a large bowl, combine the shallots and vinegar and let stand for 10 minutes. Whisk in the horseradish, oil, honey, and 1/2 tsp each of salt and black pepper.
Add the apple, celery root and fennel. Toss to combine thoroughly. Mix in the herbs, correct seasoning to taste, and transfer to a serving bowl. Top with chopped hazelnuts.
