Pear Chutney

Ingredients #

  • 18 hard pears, peeled, cored and sliced
  • 4 red bell peppers, sliced and seeded
  • 4 lemons, sliced and seeded
  • 1 medium yellow onion, chopped fine
  • 1 cup seedless raisins
  • 1 cup brown sugar
  • 2 cups sugar
  • ½ tsp. cayenne pepper
  • 1 cup apple cider vinegar
  • 1 tablespoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon dry mustard

Instructions #

Place all ingredients in a large kettle and simmer gently for about 2 hours or until the pears are translucent and tender and the syrup has thickened. Pack in sterile jars and store in the refrigerator.
