Ingredients #
- 18 hard pears, peeled, cored and sliced
- 4 red bell peppers, sliced and seeded
- 4 lemons, sliced and seeded
- 1 medium yellow onion, chopped fine
- 1 cup seedless raisins
- 1 cup brown sugar
- 2 cups sugar
- ½ tsp. cayenne pepper
- 1 cup apple cider vinegar
- 1 tablespoon salt
- 1 tablespoon ground ginger
- 1 tablespoon dry mustard
Instructions #
Place all ingredients in a large kettle and simmer gently for about 2 hours or until the pears are translucent and tender and the syrup has thickened. Pack in sterile jars and store in the refrigerator.
