Mom’s Coffee Bars

Makes about a dozen
Something my mom used to make; I think the recipe came from my grandmother. Simple and tasty.
Ingredients #
- 1 cup raisins
- 1/3 cup very hot strong black coffee
- ½ tsp. ground cinnamon
- 1 ½ cups flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 2/3 cup shortening | butter
- 1 cup sugar
- 2 eggs

Preheat oven to 350 F. Grease and flour a 9x13 baking dish.
Combine the raisins, hot coffee and cinnamon in a small bowl and set aside for 5 minutes.
Sift the flour, baking powder, baking soda and salt together in a mixing bowl.
Using an electric mixer, beat the shortening, sugar and sugar together until light and fluffy. Beat in the eggs one at a time and mix until smooth.
Add the dry ingredients and the raisin mixture, and mix thoroughly. Spread the batter evenly in the baking dish and bake for 20-30 minutes.
