This is a type of cake that often crops up in community cookbooks. It's sometimes called Oatmeal Cake. It's a snap to make, but the unusual broiled topping makes it uniquely appealing.

Ingredients #

  • For the Cake: #

    • 1 cup old-fashioned oats
    • 1 cup cold water
    • 1 cup sugar
    • 1 cup brown sugar
    • 1 cup vegetable oil
    • 2 eggs
    • 1 1/2 cups flour
    • 1 tsp. baking soda
    • 1 tsp. ground cinnamon
  • For the Icing: #

    • 1/2 cup (1 stick) butter
    • 2 tbsp. milk
    • 1 cup brown sugar
    • 1 cup flaked coconut
    • 1 cup chopped toasted pecans

Instructions #

Make the Cake: #

Combine the oats and water, and let stand at room temperature.

Butter and flour a 10" by 15" cake pan. Preheat the oven to 350F.

In a the bowl of a stand mixer, cream together together the sugars, oil, and eggs. Add the oat mixture, flour, soda, and cinnamon.

Pour the batter into the prepared baking pan and bake for 35 minutes.

When a tester comes out clean, remove the cake from the oven and set on a wire rack.

Make the Icing: #

Once the cake has come out fo the oven, combine the butter, milk, and brown sugar in a saucepan. Bring to a boil and cook for 1 minute. Add the coconut and pecans, stir to combine, and pour over the still-warm cake. Carefully spread the topping over the entire top of the cake.

Place the cake under the broiler until the icing bubbles and begins to brown. Watch carefully! It can burn quickly.
