Makes 12 muffins

These are fragrant and not overly sweet, with crispy edges and a tasty streusel topping. This easy recipe comes from a church cookbook published by the Church of Reconciliation (Episcopal) in San Antonio in the early 70s.

Ingredients #

  • For the muffins: #

    • 1 egg, beaten
    • 1/4 cup sugar
    • 1/2 cup orange juice
    • 2 tbsp vegetable oil
    • 2 cups Pioneer baking mix or Bisquick
    • 1/2 cup good orange marmalade
    • 1/2 cup chopped pecans
  • For the streusel topping: #

    • 1/4 cup sugar
    • 1/2 tsp cinnamon
    • 1 tbsp butter (softened)
    • 1 1/2 tbsp flour
    • 1/4 tsp nutmeg

Instructions #

Make the streusel topping: #

Combine the ingredients in a small bowl and cut in the butter with a fork until the mixture is crumbly.

Make the muffins: #

Preheat the oven to 400 F. Butter and flour a standard 12-cup muffin tin (or line the cups with paper liners and spray them with baking spray).

Mix together the egg, sugar, orange juice, oil, and baking mix. Stir well until thoroughly combined. Mix in the marmalade and pecans.

Pour into the muffin tins, filling each cup 2/3 full. Sprinkle the streusel mixture over the batter. Bake at 400 F for 20-25 minutes.
