Banana Nut Bread

Ingredients #
- 1/2 cup butter
- 1/2 cup shortening
- 2 cups sugar
- 6 ripe bananas
- 4 eggs
- 2 1/4 cups whole wheat flour
- 1 tsp salt
- 2 tsp baking soda
- 1 tsp vanilla
- 1 cup chopped toasted pecans

Preheat the oven to 350 F. Grease and flour two 9” x 5” loaf pan.
In the bowl of a mixer, cream the butter and shortening with the sugar until light and fluffy. Mash the bananas and mix into the creamed mixture. Add the eggs one at a time, mixing thoroughly after each one.
Sift the flour, salt and soda together and add to the banana mixture. When just incorporated, add the vanilla and pecans and mix until combined.
Pour into the loaf pans and bake at 350 F for 45 minutes (or until a tested comes out clean).
Cool on a rack for at least 15 minutes. Remove the bread from the pan and leave it to cool completely. These loaves freeze beautifully when wrapped tightly in plastic wrap and foil.
