Tri-tip is a great cut to have in the freezer, and few cuts of beef are better on the grill. Here, it’s marinated, grilled, and sliced thinly for tacos.
Ingredients #
The Beef: #
- 1 tri-tip roast
For Marinade: #
- 1/4 cup olive oil
- 4 tbsp lime juice
- 2 tsp cumin
- 2 tsp Worcestershire sauce
- 2 tsp onion powder
- 2 tsp chili powder
- 2 tsp paprika
- 1 tsp oregano
- 1/2 tsp garlic powder
- 2 tsp salt
- 1 tsp black pepper
For Tacos: #
- Corn or flour tortillas
- Fresh salsa, and/or pico de gallo, as you like
Instructions #
Make the marinade: #
Combine all marinade ingredients in a resealable plastic bag. Cut the tri-tip in half, and place in the marinade. Seal the bag and refrigerate for 4-8 hours.
For the tacos: #
Grill the marinated tri-tip until done to your liking (you definitely want it at least a bit pink — “well-done” will be miserable) and set aside, lightly covered, to rest for 10-15 minutes. Slice thinly against the grain.
Serve with warm tortillas and whatever salsa or other condiments you prefer.
